Border Of Diced:
Garnish stewed meats with a border of diced (macedoine of) vegetables.
Arrange cutlets or chops around a pyramid of cooked rice or creamed potatoes with tomatoes and mushrooms in between—this looks much more inviting than when arranged flat on a dish. Try a crown roast for that special party—not at all difficult and most impressive.Drain the potatoes and dice neatly. Drain and dice the rollmop herrings and the onions from the jar. Mix with the drained, diced beetroot, peeled and diced apple, capers and gherkins.
Heat the remaining butter or dripping, then fry the sliced onions, diced celery or peeled diced celeriac and potatoes. Add the bay leaves and parsley, tomatoes and seasoning. Pour over the stock. Replace the hearts and bacon on top, cover the pan and cook slowly for 1^ hours for lamb's hearts, 2 hours for calf's heart and 2^ hours for ox heart.
